I live in Las Vegas where food is very important. I watched this movie along with a dozen world class chefs and all of their employees.
They loved the movie too

“Real Chefs” do it all the time. They just grab a steel and in seconds they’ve got they’re edge back. As to sharpening, most professional kitchens don’t own their knife, they are rented. Once a week they’re swapped out for freshly sharpened knifes. So no big deal.
If you buy the DVD, the Ratatouille recipe used in the movie is on the Disc.
It’s even better in real life than it looks in the movie.
